I have a scheduled backup that runs nightly 7 days a week.  If I want to temporarily delay this backup for 3 days, what is the best way to do this?  Would editing the definition file (schedule) and using a start date 3 days in advance do the trick?

That would work, or you can disable that scheduled task under the Scheduled Backups tab, although then you have to remember to come back later to enable it again.
