Server Plus Exchange Log Truncation

I have Server Plus, but just using the disk image and no longer using the Exchange or SQL parts. The server does have Exchange and SQL installed, I just don't need the additional granular restore.

I deleted and recreated all backup jobs two weeks ago.

Since that point, the Exchange logs are no longer being truncated - they are still all there from when the backup was recreated.

I have checked to make sure the Exchange VSS is being used and it looks correct:

* Writer 'Microsoft Exchange Writer':
- Add component \Microsoft Exchange Server\Microsoft Information Store\AAAAA\7a09e0ca-be01-476c-bbb0-5f9ed0df5d34

Under the Defaults for VSS Options nothing is excluded. For Advanced Microsoft Exchange Options the Prune option is ticked.

What am I missing?
